Beans Provencale Recipes

Ingredients :

225 g

400 g

Garnish :


dried haricot beans, soaked and drained

canned tomatoes

large onion, chopped

clove garlic, crushed

dried oregano

salt and ground black pepper


small onion, sliced into rings

Method :
  1. Cook the beans in boiling, unsalted water for about 1 hour, or until tender, then drain.

  2. Meanwhile, boil the tomatoes, onion, garlic and oregano, seasoned with salt and pepper for 5 minutes to reduce the liquid slightly.
  3. Add the cooked, drained beans and simmer for 20 minutes.
  4. Turn into a heated serving dish and garnish with the onion rings.

Serving Suggestion :

A good accompaniment to a savory flan - either as an extra vegetable or a sauce.
