Brinjal Curry Recipes

Ingredients :




2 tablespoons

2 cups

4 cups


2 tablespoons

3 pieces

brinjals, sliced thickly

shallots, sliced

cloves garlic, sliced

curry powder, blended with 2 tablespoons water

thick coconut milk

thin coconut milk

sprig curry leaves


asam gelugur

salt to taste

Method :
  1. Heat oil and fry shallots and garlic until fragrant.
  2. Add in curry powder and fry until fragrant, making sure it does not burn.
  3. Add in the thin coconut milk, asam gelugur and curry leaves.
  4. Season to taste and bring to boil.
  5. Add in the brinjals and boil until almost tender.
  6. Add in the thick coconut milk and bring to boil.
  7. Serve hot with plain boiled rice.
