Broad Bean Savory Recipes

Ingredients :

Optional garnish :

vegetable oil

large onion, sliced

clove garlic, crushed

stalks celery, sliced

medium sized carrots, diced

white or vegetable stock

broad beans, shelled

chopped savory or parsley

salt and ground black pepper

 

'buttered' crumbs

Method :
  1. Heat the oil in a pan, add the onion and garlic and cook over a low heat for 10 minutes.

  2. Add the celery and carrots, increase heat to medium to fry, stirring occasionally for 3 minutes.

  3. Pour in the stock, bring to the boil, cover and simmer for 15 minutes.

  4. Meanwhile, steam the beans or cook in boiling, salted water, until almost tender.

  5. Drain.

  6. Add the cooked beans and herb, season to taste with salt and pepper and simmer until all the vegetables are tender.

  7. Turn into a heated serving dish and sprinkle with the crumbs just before serving.

Serving Suggestion :

A dish of mixed root vegetables, such as potatoes and parsnips, or small white turnips.
