Fresh and Dried Beans Recipes

Ingredients :

175 g

500 g

15 ml

10 ml

30 ml

dried flageolets or haricot beans, soaked and drained

green beans, trimmed and sliced

vegetable oil

lemon juice

chopped summer savory or parsley

salt and ground black pepper

Method :
  1. Cook the dried beans in boiling, unsalted water for about 1 hour, or until tender.

  2. Drain well and keep warm.

  3. Meanwhile, steam the green beans or cook in boiling, salted water until just tender.

  4. Drain.

  5. Mix together the oil and lemon juice, season with salt and pepper and stir in most of the summer savory or parsley.

  6. Mix together the dried and green beans and while still hot, toss in the dressing.

  7. Turn into a heated serving dish and garnish with the remaining herbs.

  8. Serve hot.

Serves 4

Per Serving : 5 g fat, 14 g fiber.
