Lentil Kedgeree Recipes

Ingredients :

whole brown lentils, soaked and drained

brown long grain rice

curry powder

chopped parsley

small onions, thinly sliced into rings

red pepper, sliced into rings

salt and ground black pepper

Method :
  1. Cook the lentils in boiling, unsalted water for 40-45 minutes, until tender.

  2. Drain thoroughly.

  3. Meanwhile, cook the rice in boiling, salted water for 30-40 minutes, or until just tender.

  4. Drain and stir in the curry powder while still hot.

  5. Mix together the lentils and rice, stir in parsley and season with salt and pepper.

  6. Turn into a heated serving dish and arrange the onion and pepper rings on top.

Serves 4

Per Serving : 2 g fat, 12 g fiber.
