Peas With Pancetta Garlic and Wine Recipes

Ingredients :

625 g

100 ml

hulled fresh peas or frozen petits pois

small white onion or shallot, very thinly sliced

clove garlic, finely chopped

finely chopped parsley

diced pancetta

extra virgin olive oil

dry white wine

stock (homemade or bouillon cube)

Method :
  1. Rinse the peas in a colander under cold water.

  2. Sauté the onion or shallot, garlic, parsley, and pancetta together in the oil over a moderate heat for 2 minutes.

  3. Add the peas, season with salt and pepper, and stir well.

  4. Pour in the wine, cover and simmer gently for 15-20 minutes, stirring occasionally.

  5. Moisten with a little stock as necessary.

  6. Serve hot.

Serves 4

Preparation        : 10 minutes + time for frozen petits pois

Cooking             : 25 minutes
