Twice Baked Potatoes Recipe

Serves 10

Ingredients :

5 medium to large potatoes

1 cup nonfat plain yogurt

1 pint 1% milk fat cottage cheese

1 cup low-fat cheddar cheese, shredded


Method :

Preheat oven to 350 degrees. Bake potatoes for 45 minutes or until done. Slice potatoes in half length wise. Scoop out centers and set aside. In a food processor, blend yogurt and cottage cheese until smooth. Add potato centers and blend again until smooth. Fill each potato with mixture and top with cheddar cheese. Bake until cheese is melted.
