Vegetable Curry Recipe

Ingredients :

medium potatoes, peeled and diced

small cauliflower, cut into florets

medium leeks, sliced

medium onion, chopped

vegetable oil

ground turmeric

ground cumin

ground black pepper

coriander seed

canned tomatoes


pears, peeled, cored and diced

cooking apple, peeled, core and diced


garam masala

plain low fat yoghurt, to serve


Method :

Steam the potatoes, cauliflower and leeks until they are barely tender. Fry the onion in the oil over moderate heat for 2 minutes. Stir in the turmeric, cumin, pepper and coriander and cook for 1 minutes, stirring all the time. Add the canned tomatoes and water, bring to the boil, cover and simmer for 20 minutes. Add the steamed vegetables, the pears, apple and sultanas and stir in the salt and garam masala.

Simmer for 5-10 minutes, until the fruit is tender. Serve topped with yoghurt.

Serves 4

Brown rice is the natural accompaniment, with fruit chutney and grilled or fried poppadoms.
