Crab and Vegetable Soup (potage Marie-Jeanne) Recipes

Ingredients :

2 carrots

3 leeks

2 onions

2 cloves garlic

3 tomatoes

3 tbsp oil

bouquet garni

2.5 pints hot water

3 tbsp ground rice

1 large crab

3.5fl oz cream

Method :

Wash, peel and slice the carrots. Wash and cut the leeks into short lengths. Peel and chop the onions and garlic. Skin, de-seed and chop the tomatoes.

Fry the carrots, onions and leeks in a large saucepan with the oil. When they start to soften, add the tomatoes, garlic and bouquet garni.

Mix well and pour in the hot water mixed with the ground rice. Bring to the boil and simmer for 30 minutes. Meanwhile, dress the crab.

When the soup is cooked, liquidize or mouli it and return to the pan. Add all the crab meat, check the seasoning and bring back to the boil. Stir in the cream away from the heat and serve hot.
